Grilled Greek Yogurt Chicken Skewers

  • 2 lbs boneless skinless chicken breasts
  • 1/2 cup plain Greek yogurt
  • 3 tbsp olive oil
  • juice from 1 lemon
  • 3 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 large zucchini
  • 1 red onion


  • Cut the chicken breasts into 1" pieces.
  • In a large bowl, whisk together the Greek yogurt, 2 tbsp of the olive oil, lemon juice, garlic, salt, and pepper.
  • Add the chicken and toss well to combine.
  • Cover and refrigerate for at least 30 minutes, or up to 6 hours.
  • When ready to cook, cut the zucchini and red onion into pieces that can be threaded on a skewer and toss in the remaining 1 tbsp of olive oil. Season with salt and pepper, to taste.
  • Thread the chicken, zucchini, and onion onto the skewers.*
  • Preheat the grill to medium-high heat.
  • Place the kabobs onto the grill and cook for 13-15 minutes, turning once, until the chicken is cooked through.
  • Serve and enjoy!


If you are using wooden skewers, be sure to soak them in water for 15 minutes prior to using/threading the chicken and vegetables so they don't burn.
