Korean Glazed Grilled Pork Chops

Ingredients

  • 4 thick-cut boneless pork chops
  • ¼ cup soy sauce
  • 2 tablespoons Korean gochugang
  • 1 tablespoon fresh ginger minced
  • 2 cloves garlic minced
  • 2 tablespoons honey
  • 1 teaspoon sesame oil

Instructions

  • In a small bowl, whisk together soy sauce, gochugang, fresh ginger, garlic, honey, and sesame oil until well combined.
  • Place pork chops in a shallow dish and pour about ¾ of the marinade over them. Make sure the marinade coats the pork chops.
  • Let the pork chops sit in marinade for at least 20 minutes.
  • Once marinated, preheat your grill to medium heat.
  • Place your marinated pork chops on the grill and grill for 6 minutes on the first side. Flip, and then grill ~6-8 more minutes, until the internal temperature reaches 145-160 degrees F for medium rare to well done pork chops. I cooked mine to 155 degrees F, as I prefer them without any pink in the middle. The cooking time will depend on how thick your pork chops are. It’s best to use a meat thermometer when cooking meat like pork and chicken for accuracy in doneness.
  • Serve brushed with remaining glaze.
