In a small bowl, whisk together soy sauce, gochugang, fresh ginger, garlic, honey, and sesame oil until well combined.
Place pork chops in a shallow dish and pour about ¾ of the marinade over them. Make sure the marinade coats the pork chops.
Let the pork chops sit in marinade for at least 20 minutes.
Once marinated, preheat your grill to medium heat.
Place your marinated pork chops on the grill and grill for 6 minutes on the first side. Flip, and then grill ~6-8 more minutes, until the internal temperature reaches 145-160 degrees F for medium rare to well done pork chops. I cooked mine to 155 degrees F, as I prefer them without any pink in the middle. The cooking time will depend on how thick your pork chops are. It’s best to use a meat thermometer when cooking meat like pork and chicken for accuracy in doneness.
Serve brushed with remaining glaze.
