Asparagus Caprese Salad

Ingredients

  • 1 bunch of asparagus about 2 cups chopped
  • 16 ounces cherry tomatoes halved
  • 8 ounces mozzarella balls
  • 2 tablespoons olive oil
  • 2 tablespoons fresh basil
  • ½ teaspoon sea salt
  • pepper to taste
  • *optional: 1 tablespoon balsamic vinegar

Instructions

  • Bring a medium pot of water to boil.
  • Once boiling, add asparagus and cook for 1 minute, until bright green.
  • Strain and rinse with cold water to stop the cooking.
  • Once cooled, combine asparagus with tomatoes, mozzarella, olive oil, basil, sea salt, and pepper and stir until combined.
  • *Add in balsamic vinegar if desired
  • Serve and enjoy!
