Cajun Turkey and Rice Soup

Ingredients

  • 1 Bone-In Cajun Spiced Turkey Breast can substitute 3 large chicken breasts, cooked and shredded
  • 2 tablespoons olive oil
  • 1 white onion diced
  • 1 red bell pepper stem and seeds removed, and diced
  • 1 green bell pepper stem and seeds removed, and diced
  • 2 cloves garlic minced
  • 2 teaspoons Cajun seasoning
  • 1 can dark red kidney beans drained and rinsed
  • 1 14 ounce package Jennie-O Hardwood Smoked Turkey Sausage, cut into bite-sized pieces (or something similar like kielbasa)
  • 1 cup brown rice can substitute white rice too
  • 6 cups chicken broth
  • chopped green onions for topping

Instructions

  • Cook Jennie-O Bone-In Cajun Spiced Turkey Breast according to package. Alternately, you can cook it in the slow cooker on high for 4 hours or low for 6-8 hours.
  • Remove the meat from the bone and shred.
  • In a large soup pot, heat olive oil over medium-high heat.
  • Add onion, red bell pepper, and green bell pepper, and stir to combine.
  • Cook for about 10 minutes, until the veggies are softened, stirring often.
  • Add garlic and Cajun seasoning, and cook another minute.
  • Add smoked turkey sausage, rice, and chicken broth.
  • Bring to a boil, reduce heat to medium, cover, and let simmer for 30-40 minutes, until rice is tender. If you use white rice, it will not take as long - closer to 20 minutes.
  • Ladle into soup bowls and top with green onion.
  • Enjoy!

Notes

Total cook time includes time for cooking turkey breast in slow cooker on low for 8 hours. If you cook it in the oven it will be less total time. I like to cook the turkey ahead of time and refrigerate it until I'm ready to cook the soup!
