- 1 onion diced
- 2 carrots peeled and finely chopped
- 28 ounce can crushed tomatoes
- 14 ounce can diced tomatoes
- 16 ounces frozen Italian meatballs
- 8 ounces frozen chopped spinach
- 2 teaspoons Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- 8 cups beef broth
- 16 ounces cheese tortellini
- Shredded Parmesan cheese and chopped fresh parsley for topping
Place all ingredients except for tortellini in slow cooker.
Cook on low for 6-8 hours, or high for 3-4 hours.
Add tortellini for the last 30 minutes.
Serve topped with Parmesan cheese and chopped parsley.
