Cream Cheese Swirled Almond Butter Oatmeal Chocolate Chunk Bars

Ingredients

  • 1 cup coconut sugar
  • 1 cup natural almond butter
  • 2 teaspoons pure vanilla extract
  • 1 ¼ cups white whole wheat flour
  • ¼ cup old fashioned oats
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ cup plus 2 tablespoons unsweetened almond milk
  • ½ cup dark chocolate chips/chunks
  • 4 ounces GO VEGGIE Plain Cream Cheese
  • 2 tablespoons coconut sugar
  • 1 teaspoon pure vanilla extract

Instructions

  • Preheat oven to 350 degrees F.
  • Line an 8x8" baking dish with foil or parchment paper. If using foil, grease with cooking spray.
  • In a large bowl with electric mixer, beat together coconut sugar, almond butter, and vanilla for 1 minute, until well combined.
  • Add flour, oats, baking powder, salt, and almond milk, and beat until combined.
  • Fold in chocolate chunks.
  • Spread into prepared pan.
  • In a separate bowl with electric mixer, beat cream cheese, coconut sugar, and vanilla until well combined.
  • Dollop over bars and swirl with a butter knife.
  • Bake in preheated oven for 23-25 minutes, or until edges are golden and toothpick comes out of the center clean.
  • Cool completely. Cut and enjoy!
