Barbecue Chicken Quinoa Casserole

Servings: 9 x13" pan, about 6 servings

Ingredients

  • 1 cup uncooked quinoa
  • 1 1/2 cups shredded chicken about 2 large chicken breasts
  • 1 can corn kernels I used no salt added, drained rinsed
  • 1 can black beans drained and rinsed
  • 2 cups barbecue sauce
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped red onion for topping
  • 1/4 cup chopped cilantro for topping

Instructions

  • Preheat oven to 350 degrees F.
  • Combine quinoa with 1 3/4 cups of water in a medium saucepan over medium-high heat.
  • Bring to a boil, reduce heat to medium, cover, and let cook for 15-18 minutes, until all of the water is absorbed and quinoa is sprouted. Remove from heat.
  • In a large bowl, combine quinoa, chicken, corn, black beans, barbecue sauce and 1 1/2 cups of cheese.
  • Stir well to combine.
  • Transfer quinoa mixture to a 9x13" pan that has been coated with cooking spray.
  • Top with remaining 1/2 cup of cheese.
  • Bake in preheated oven for 20-25 minutes, until cheese is melty and mixture is warm throughout.
  • Top with chopped red onion and cilantro.
  • Enjoy!
