Overnight Cinnamon Apple Steel Cut Oatmeal

Servings: 4 servings

Ingredients

  • 1 cup steel cut oats
  • 3 cups water
  • 1 cup milk I used unsweetened vanilla almond milk
  • 2 tablespoons coconut sugar can also use brown sugar, honey, or agave
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • teaspoon cloves

For the apples:

  • 1 tablespoon butter
  • 1 large granny smith apple peeled and diced
  • 2 teaspoons coconut sugar or brown sugar
  • ½ teaspoon cinnamon
  • chopped pecans for topping
  • yogurt for topping

Instructions

  • In a medium pot, add steel cut oats and water.
  • Bring to a boil and let simmer for 1 minute.
  • Remove from heat and cover with lid. Let sit overnight.
  • In the morning, add milk, coconut sugar, cinnamon, nutmeg, salt, and cloves, and stir to combine.
  • Place over medium heat and cook until warmed through and thickened, about 5-10 minutes.
  • Meanwhile, cook the apples.
  • Add butter, apples, coconut sugar, and cinnamon to a small saucepan.
  • Cook 5-7 minutes, until apples are softened.
  • To serve, spoon oatmeal into bowls and top with apples, pecans, and yogurt.
  • Enjoy!
  • Refrigerate any leftovers - this is great for breakfast all week as it doesn't get goopy like regular oatmeal!
