In a medium pot, add steel cut oats and water.
Bring to a boil and let simmer for 1 minute.
Remove from heat and cover with lid. Let sit overnight.
In the morning, add milk, coconut sugar, cinnamon, nutmeg, salt, and cloves, and stir to combine.
Place over medium heat and cook until warmed through and thickened, about 5-10 minutes.
Meanwhile, cook the apples.
Add butter, apples, coconut sugar, and cinnamon to a small saucepan.
Cook 5-7 minutes, until apples are softened.
To serve, spoon oatmeal into bowls and top with apples, pecans, and yogurt.
