Ingredients

For the chipotle dressing:

  • 2 chipotles en adobo sauce
  • 3 tablespoons olive oil
  • 1 tablespoon agave nectar
  • 2 tablespoons lime juice
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic
  • ½ teaspoon cumin
  • ¼ teaspoon salt

For the dip:

  • 14 ounces frozen corn thawed
  • 14 ounce can black beans drained and rinsed
  • ½ red onion finely minced
  • 10 ounces cherry tomatoes quartered
  • 4 green onions diced
  • cup cilantro chopped
  • 1 avocado diced

Instructions

  • Combine all dressing ingredients in a food processor and pulse until all ingredients are blended.
  • Combine all the dip ingredients in a large bowl and drizzle with dressing.
  • Stir well to combine.
  • Serve with tortilla chips and enjoy!
