For the chipotle dressing:
- 2 chipotles en adobo sauce
- 3 tablespoons olive oil
- 1 tablespoon agave nectar
- 2 tablespoons lime juice
- 2 tablespoons red wine vinegar
- 2 cloves garlic
- ½ teaspoon cumin
- ¼ teaspoon salt
For the dip:
- 14 ounces frozen corn thawed
- 14 ounce can black beans drained and rinsed
- ½ red onion finely minced
- 10 ounces cherry tomatoes quartered
- 4 green onions diced
- ⅓ cup cilantro chopped
- 1 avocado diced
Combine all dressing ingredients in a food processor and pulse until all ingredients are blended.
Combine all the dip ingredients in a large bowl and drizzle with dressing.
Stir well to combine.
Serve with tortilla chips and enjoy!
