Almond Coconut Energy Bites

Ingredients

  • 1 ½ cups old fashioned oats
  • ¼ cup flax whole or ground
  • ½ cup unsweetened shredded coconut
  • ½ cup slivered almonds
  • cup honey
  • cup coconut oil
  • ½ cup almond butter
  • 1 teaspoon pure vanilla extract

Instructions

  • Combine oats, flax, coconut, and almonds.
  • In small bowl, combine honey, coconut oil, almond butter, and vanilla.
  • Add to dry ingredients and mix well until completely combined.
  • Refrigerate for 30 minutes.
  • Roll dough into ~2 tablespoon balls.
  • Store in the refrigerator in an airtight container.
