Sweet Potato Fries with Curry Mayo Dipping Sauce

Ingredients

  • 3 medium-large sweet potatoes
  • 2 tablespoon olive oil
  • kosher salt and pepper to taste
  • 1 cup mayonnaise
  • ½ cup ketchup
  • 1-2 tablespoon curry powder depending on your taste
  • 1 teaspoon garlic powder

Instructions

  • To make sweet potatoes:
  • Preheat oven to 425 degrees F.
  • Line baking sheet with aluminum foil and spray with cooking spray.
  • You can peel the potatoes or keep the skin on. I like to keep the skin on and scrub them really good to make sure they are clean, but I've done it both ways.
  • Cut each potato in half the long way, the set flat side down and cut into ¼" strips, then cut each strip into half to look like a french fry.
  • Once all of the fries are cut, place onto prepared baking sheet and drizzle with olive oil.
  • Toss them around with your hands or a spoon to evenly distribute the olive oil.
  • Sprinkle with kosher salt and pepper.
  • Bake in preheated oven for 30-40 minutes, tossing after 15 minutes until they are cooked through and slightly browned.
  • The cooking time range is so large because of difference in preference of how crispy people like their fries.
  • If you want them extra crispy, cook 40 minutes.
  • Keep in mind, they won't be crispy like fried fries...they are baked after all!
  • To make the curry mayo:
  • Mix all ingredients together well with a spoon.
  • Refrigerate, or serve immediately.
  • Enjoy!
