blt and avocado pasta salad

Ingredients

  • 12 oz penne pasta or your favorite short noodled pasta
  • 6 slices bacon
  • 1 cup cherry tomatoes halved
  • 2 cups spinach chopped
  • 1 avocado diced
  • ¼ cup mayonnaise
  • ½ cup plain yogurt or sour cream
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Heat pot of water to boiling, and cook pasta al dente as package directions state.
  • Meanwhile, cook bacon as you would like.
  • Set aside and let cool.
  • In small bowl, combine mayo, yogurt, parsley, garlic powder, onion powder, oregano, basil, salt and pepper.
  • Mix well.
  • Set aside.
  • In a large bowl, combine tomatoes, spinach, and bacon.
  • Once pasta is done cooking, drain and pour over vegetables and bacon to slightly wilt the spinach.
  • Toss with dressing and add avocados.
  • Cover and refrigerate for at least an hour.
  • Serve cold.
