apple and avocado kale salad

Ingredients

  • for the salad:
  • 1 bunch of kale I used regular curly kale
  • 1/2 red onion thinly sliced
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 avocado diced
  • 1 apple chopped
  • for the dressing:
  • 1/4 cup olive oil
  • 3 tbsp apple cider vinegar white wine vinegar would work too
  • 2 tbsp smooth dijon mustard
  • 1 tbsp honey

Instructions

  • Wash kale, then tear leaves off stems.
  • Chop leaves into bite-sized pieces.
  • Transfer to a large salad bowl.
  • Add onion, cranberries, pecans, avocado, and apples to kale.
  • Make dressing by whisking together all listed ingredients.
  • Pour over salad and toss to combine.
  • For best flavor, let the kale sit in dressing for 10-20 minutes before serving.
