tater tot hot dish

Pre-baking the tater tots cuts while making the hot dish filling cuts down on total cooking time, making this a perfect 30 minute weeknight meal!

Ingredients

  • 1 lb ground beef
  • 1 onion diced
  • ¼ cup flour
  • 1 cup beef broth
  • 1 cup milk I used skim but 2% or whole would make it richer
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 3 cups frozen mixed veggies corn, peas, and carrots
  • ~1 lb tater tots

Instructions

  • Preheat oven to 400 degrees F.
  • Place tots on baking sheet and bake for 10 minutes. Meanwhile, cook the filling.
  • In large skillet, cook ground beef, until cooked through, breaking it apart as you go, about 5-7 minutes.
  • Remove all but ~1 tablespoon of grease from beef and add onion and cook another 3 minutes.
  • Add flour and stir well to combine with beef and onion, forming a sort of paste.
  • Slowly add beef broth and milk, stirring well to combine.
  • Season with salt and garlic powder.
  • Finally, add in mixed veggies, stirring well to combine.
  • Pour into a greased 9" baking dish, then top with partially baked tots.
  • Bake in preheated oven for 10-15 minutes, until tots are golden brown and mixture is boiling.
