spiced chicken skewers with nectarine and avocado quinoa salad

Servings: 4 servings

Ingredients

for the chicken:

  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 2 teaspoon chili powder
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ½ teaspoon cumin
  • ¼ teaspoon black pepper
  • 1 ½ lbs boneless skinless chicken breasts cut into 2" pieces
  • 1 large red onion cut into 2" pieces

for the quinoa:

  • 1 cup dry quinoa
  • 2 nectarines diced
  • 1 red bell pepper diced
  • ¼ cup thinly sliced red onion
  • 2 tablespoon cilantro diced
  • 1 ½ teaspoon lime juice
  • 2 teaspoon minced jalapeno
  • ¼ teaspoon kosher salt
  • 1 avocado diced

Instructions

  • Combine all ingredients for chicken in shallow dish, and let chicken marinate for at least 20 minutes, up to an hour.
  • To make quinoa, cook according to package directions.
  • Combine with nectarines, red bell pepper, onion, cilantro, lime juice, jalapeno, salt, and avocado. Serve with chicken skewers.
  • Once done marinating, thread onion and chicken onto skewers.
  • Grill on preheated grill, 5 minutes on each side. Enjoy!
