Ingredients

  • 8 slices bacon cooked, and chopped into small pieces
  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons chives
  • 1 cup shredded cheddar cheese
  • 12 tablespoons butter cold
  • 1 ½ cups buttermilk
  • 4 tablespoons maple syrup

For topping:

  • 3 tablespoons melted butter
  • 2 tablespoon maple syrup

Instructions

  • In a large bowl, mix together the flour, baking powder, baking soda, and salt.
  • Mix in the chives, cheese, and chopped bacon.
  • With a cheese box grater, grate the cold butter. If you don't have a box grater, just cut it up into small pieces.
  • Add the butter to the flour mixture and stir until it resembles coarse crumbs or a very soft dough.
  • In a medium bowl, whisk together the buttermilk and maple syrup.
  • Add the buttermilk mixture to the dough and stir until combined.
  • Dump the dough onto a lightly floured mixture and slightly knead to get the dough completely combined.
  • Roll out into a rectangle that is approximately 1 ½" thick.
  • Using a biscuit cutter, cookie cutter, or a pizza cutter, cut out ~12 biscuits from the dough. Note: The number of biscuits will depend on how large your biscuit cutter is, but it should be between 10-12.
  • Place on a parchment paper lined baking sheet and freeze for 15 minutes.
  • Meanwhile, preheat the oven to 450 degrees F.
  • Prior to baking, mix the melted butter and maple syrup in a small bowl.
  • Brush over the biscuits before baking. There should be leftover which will be used after baking.
  • Bake the biscuits in the preheated oven for 14-16 minutes, until golden brown.
  • Immediately after baking brush with more of the butter/maple syrup mixture.
  • Serve and enjoy!
