- 1 medium zucchini cut into bite-sized pieces
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 red onion sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 lb cheddar sausage cut into bite-sized pieces
Place veggies in a large bowl.
In small ramekin, whisk together olive oil, paprika, garlic powder, salt, and pepper.
Pour over veggies and toss well to combine.
Preheat grill to medium-high heat.
Add veggies to a grill pan and place on grill.
Grill for 20-25 minutes, until preferred doneness. I like mine a little on the crispy side, so I cooked mine closer to 25 minutes.
For the last 10 minutes, add the sausage to the grill pan and toss with the veggies.
Serve and enjoy!

- Prep this ahead by chopping the vegetables and sausage ahead of time. Combine the veggies with the oil and spices and store in an airtight container in the fridge. Store the sausage separately in an airtight container in the fridge.
- Feel free to swap the veggies for what you have on hand or prefer.
- Add some heat by adding ¼-1/2 teaspoon of cayenne pepper.
