Chocolate Chunk Coconut Banana Bread

Ingredients

  • 4 ripe bananas mashed
  • cup coconut oil melted
  • ½ cup sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract or ½ teaspoon vanilla extract and ½ teaspoon coconut extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 ¾ cups white whole wheat flour
  • ½ cup dark chocolate chunks
  • ½ cup sweetened shredded coconut

Instructions

  • Preheat oven to 350 degrees F. Grease a 9x5" loaf pan with cooking oil.
  • In a large bowl combine mashed bananas, coconut oil, and sugar, and whisk until well combined.
  • Add eggs and vanilla extract and whisk to combine.
  • Add baking soda, cinnamon, salt, and flour, and mix with a spatula.
  • Fold in chocolate chunks and coconut.
  • Pour into prepared loaf pan.
  • Bake in preheated oven for 45-55 minutes, until golden brown and toothpick comes out of the middle clean.
  • Slice and enjoy!
