Coconut Maple Pecan Granola

Ingredients

old fashioned oats

chopped pecans
1 ½
cups
unsweetened shredded or flaked coconut
¾
cup
maple syrup
¾

coconut oil

teaspoons
pure vanilla extract

teaspoon
sea salt
1
teaspoon
cinnamon
Instructions
Preheat oven to 275 degrees F.
Combine oats, pecans, and coconut in a large bowl.
Mix together maple syrup, coconut oil, vanilla, salt, and cinnamon in a separate bowl, and then pour over oat mixture.
Stir well until evenly distribute.
Spread out onto 2 baking sheets lined with parchment paper.
Bake in preheated oven for 1 hour, stirring every 15 minutes.
Let cool.
Store in airtight container in the refrigerator up to 2 weeks, or in the freezer up to 3 months.

Notes
This granola freezes great! I usually put half in my refrigerator to eat over the span of a couple of weeks and the rest in the freezer.
