Coconut Maple Pecan Granola

Ingredients

  • 6 cups old fashioned oats
  • 2 cups chopped pecans
  • 1 ½ cups unsweetened shredded or flaked coconut
  • ¾ cup maple syrup
  • ¾ cup coconut oil
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 275 degrees F.
  • Combine oats, pecans, and coconut in a large bowl.
  • Mix together maple syrup, coconut oil, vanilla, salt, and cinnamon in a separate bowl, and then pour over oat mixture.
  • Stir well until evenly distribute.
  • Spread out onto 2 baking sheets lined with parchment paper.
  • Bake in preheated oven for 1 hour, stirring every 15 minutes.
  • Let cool.
  • Store in airtight container in the refrigerator up to 2 weeks, or in the freezer up to 3 months.
  • Enjoy!

Notes

This granola freezes great! I usually put half in my refrigerator to eat over the span of a couple of weeks and the rest in the freezer.
