Pumpkin Chocolate Chip Bread

Ingredients

  • 15 ounces pumpkin puree
  • 2 large eggs
  • ½ cup coconut oil melted
  • ½ cup milk I used unsweetened vanilla almond milk
  • ½ cup brown sugar
  • 2 teaspoons pure vanilla extract
  • 1 ¾ cup white whole wheat flour
  • 2 teaspoons pumpkin pie spice
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chunks

Instructions

  • Preheat oven to 350 degrees F.
  • Spray a 9x5" loaf pan with cooking spray.
  • In a large bowl, combine pumpkin, eggs, coconut oil, milk, brown sugar, and vanilla, and whisk together until well combined.
  • In a separate bowl, mix together flour, pumpkin pie spice, baking powder, baking soda, and salt.
  • Add dry ingredients to wet ingredients and stir together with a spatula until just combined.
  • Fold in chocolate chunks.
  • Pour into prepared loaf pan.
  • Bake in preheated oven for 55-60 minutes until center springs back lightly when touched.
  • Cool and slice.
