Watermelon Coconut Popsicles
Servings: 6 -10 popsicles, depending on the size of your popsicle molds
- 4 cups chopped seedless watermelon approximately ¼ of a large watermelon
- 1 pint So Delicious Coconut Milk Vanilla Dairy-Free Frozen Dessert they have a coconut flavor that would be great too!
Place watermelon and ice cream in a large high powered blender.
Puree on high until well blended.
Divide among popsicle molds and top with stick.
Freeze 4-6 hours, or until completely frozen.
Serve frozen and enjoy!
I made 6 popsicles, because that's how many molds my popsicle set has, but I had leftover filling. I think it would make about 4 more popsicles, depending on the size of your molds.
I put the rest of the filling in the ice cream container and enjoyed it frozen with a spoon!
