Steak Fajita Kabobs

Servings: 4 servings

Ingredients

  • 2 medium sirloin steaks cubed
  • 1 red bell pepper de-seeded and white part removed, and cut into squares
  • 1 orange bell pepper de-seeded and white part removed, and cut into squares
  • 1 yellow bell pepper de-seeded and white part removed, and cut into squares
  • 1 red onion sliced

For the marinade:

  • 1/4 cup olive oil
  • juice of 1 lime
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 3 cloves garlic
  • 1/2 teaspoon salt
  • Metal skewers

Instructions

  • Place all cubed steak and veggies in a large bowl.
  • In a separate small bowl, combine marinade ingredients and whisk to combine.
  • Pour over beef and veggies and mix well to combine.
  • Marinate for at least 30 minutes, up to overnight.
  • Once you are ready to eat, turn on your grill to medium-high heat.
  • Place veggies and beef on skewers.
  • Grill for 2-3 minutes on each side, turning 3 times.
  • Serve immediately and enjoy!
