Thanksgiving Leftovers Enchiladas

Ingredients

  • large flour tortillas
  • leftover mashed potatoes
  • leftover stuffing
  • leftover turkey
  • leftover green beans any kind!
  • ~1 cup of leftover gravy*
  • 1 cup shredded cheddar cheese
  • leftover cranberry sauce
  • *the leftover gravy that we made was pretty solid the next day due to the fat. I added it back to a small saucepan along with 2 tablespoons of flour and ½ cup of milk that I whisked together until smooth and cooked over medium-low heat until it was gravy consistency again.

Instructions

  • Preheat oven to 350 degrees F.
  • Spray a 9x13" baking pan with cooking spray.
  • In the middle of each tortilla, spread ~2 tablespoons of mashed potatoes. The measurements here are very rough. If you'd like more mashed potatoes, add more. Just kind of estimate to your liking.
  • Top with a couple spoonfuls of stuffing, some turkey, and green beans.
  • Roll up and place seam side down in the baking dish until the baking dish is full.
  • Cover with gravy and sprinkle with cheddar cheese.
  • Bake in preheated oven for 25-30 minutes, until cheese is melted.
  • Serve topped with leftover cranberry sauce.
  • Enjoy!
