Chimichurri Turkey Burgers

A flavorful turkey burger recipe made with bright and zesty chimichurri!

Ingredients

  • 1 bunch of fresh parsley
  • cup olive oil
  • 1 tablespoon red wine vinegar
  • juice of ½ a lemon
  • 4 cloves garlic
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes

For the burgers:

  • 1 lb ground turkey
  • ¼ cup chimichurri
  • ¼ cup finely chopped onion
  • ½ teaspoon cumin
  • pepper jack cheese slices
  • 4 buns

Instructions

To make the chimichurri:

  • Combine all chimichurri ingredients in a food processor and pulse until blended.

To make the burgers:

  • Preheat grill on medium-high heat.
  • Combine turkey, chimichurri, onion, and coming and mix with a spatula or your hands until ingredients are thoroughly combined, but don't overmix!
  • Form into 4 patties that are approximately ½" thick.
  • Place on a greased grill (I spray mine with cooking spray) and cook 7-8 minutes on each side, until cooked through. Top with pepper jack cheese for the final 3 minutes.
  • Place on a bun and then top with additional chimichurri sauce.
