Cinnamon Apple Bread + prAna Giveaway!

Ingredients

  • 2 apples peeled and finely diced
  • 1 teaspoon cinnamon
  • 2 tablespoons brown sugar
  • 4 cups white whole wheat flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • 1 ⅔ cups plain yogurt
  • 1 cup unsweetened applesauce
  • ½ cup maple syrup
  • 4 eggs
  • 4 teaspoons pure vanilla extract
  • 12 tablespoons unsalted butter melted
  • For the oat streusel:
  • cup old fashioned oats
  • ¼ cup all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 6 tablespoons cold unsalted butter cut into cubes

Instructions

  • Preheat oven to 350 degrees F.
  • Spray 2 9x5" loaf pans with cooking spray.
  • In small bowl, combine apples with cinnamon and brown sugar.
  • In large bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Stir well to combine.
  • In medium bowl, combine yogurt, applesauce, maple syrup, eggs, vanilla, and melted butter.
  • Pour into dry ingredients and stir until just combined.
  • Fold in apples.
  • Divide evenly between two loaf pans.
  • Make the streusel by combining oats, flour, brown sugar, cinnamon and salt.
  • Use your fingers or a fork to work the butter into the oat mixture.
  • Sprinkle streusel over loaves, pressing it slightly into the batter.
  • Bake in preheated oven for 50-60 minutes, until knife comes out with just a few moist crumbs and top is golden brown.
  • Let cool for 15 minutes before carefully removing from pan.
  • Let cool completely on wire rack.
  • Cut and enjoy!
