Preheat oven to 350 degrees F.
Spray 2 9x5" loaf pans with cooking spray.
In small bowl, combine apples with cinnamon and brown sugar.
In large bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Stir well to combine.
In medium bowl, combine yogurt, applesauce, maple syrup, eggs, vanilla, and melted butter.
Pour into dry ingredients and stir until just combined.
Fold in apples.
Divide evenly between two loaf pans.
Make the streusel by combining oats, flour, brown sugar, cinnamon and salt.
Use your fingers or a fork to work the butter into the oat mixture.
Sprinkle streusel over loaves, pressing it slightly into the batter.
Bake in preheated oven for 50-60 minutes, until knife comes out with just a few moist crumbs and top is golden brown.
Let cool for 15 minutes before carefully removing from pan.
Let cool completely on wire rack.
Cut and enjoy!
