Strawberry Rhubarb Baked Oatmeal

Ingredients

  • 3 cups old fashioned oats
  • 1 teaspoon cinnamon
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup honey
  • 1 teaspoon vanilla
  • ¼ cup coconut oil measured in melted stated
  • 1 ¾ cups milk I used unsweetened vanilla almond milk
  • 3 eggs
  • 1 ½ cups diced rhubarb
  • 1 cup diced strawberries
  • ½ cup chopped walnuts

Instructions

  • Preheat oven to 350 degrees F.
  • Grease 9x13" baking dish, and set aside.
  • In large bowl, combine oats, cinnamon, baking powder, and salt. Stir to combine.
  • In a separate bowl, whisk together honey, vanilla, coconut oil, milk, and eggs.
  • Add to oat mixture, stirring with a spatula until combined.
  • Fold in rhubarb, strawberries, and walnuts.
  • Pour into prepared baking dish.
  • Bake in preheated oven to 40-45 minutes.
