Preheat oven to 325 degrees F.
In large bowl combine oats, flaxseed, walnuts, salt, coffee, and cocoa.
In smaller bowl, stir together melted coconut oil, honey, and vanilla.
Pour over dry mixture and stir to combine.
Place on baking sheet lined with parchment paper.
Bake in preheated oven for 30-35 minutes, stirring every 10 minutes to make sure the edges don't get burned.
After granola is golden brown, remove from oven.
Let cool for about 5 minutes then stir in cocoa nibs/chocolate.
Let cool completely.
Serve and enjoy!
Store in airtight container.
