Ingredients

  • 3 cups old fashioned oats
  • 2 tablespoons ground flaxseed
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon salt
  • 1 tablespoon instant coffee granules
  • 2 tablespoons unsweetened cocoa powder
  • 3 tablespoons coconut oil melted
  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • 3/4 cup cocoa nibs or mini chocolate chips

Instructions

  • Preheat oven to 325 degrees F.
  • In large bowl combine oats, flaxseed, walnuts, salt, coffee, and cocoa.
  • In smaller bowl, stir together melted coconut oil, honey, and vanilla.
  • Pour over dry mixture and stir to combine.
  • Place on baking sheet lined with parchment paper.
  • Bake in preheated oven for 30-35 minutes, stirring every 10 minutes to make sure the edges don't get burned.
  • After granola is golden brown, remove from oven.
  • Let cool for about 5 minutes then stir in cocoa nibs/chocolate.
  • Let cool completely.
  • Serve and enjoy!
  • Store in airtight container.
