To make sweet potatoes:
Preheat oven to 425 degrees F.
Line baking sheet with aluminum foil and spray with cooking spray.
You can peel the potatoes or keep the skin on. I like to keep the skin on and scrub them really good to make sure they are clean, but I've done it both ways.
Cut each potato in half the long way, the set flat side down and cut into ¼" strips, then cut each strip into half to look like a french fry.
Once all of the fries are cut, place onto prepared baking sheet and drizzle with olive oil.
Toss them around with your hands or a spoon to evenly distribute the olive oil.
Sprinkle with kosher salt and pepper.
Bake in preheated oven for 30-40 minutes, tossing after 15 minutes until they are cooked through and slightly browned.
The cooking time range is so large because of difference in preference of how crispy people like their fries.
If you want them extra crispy, cook 40 minutes.
Keep in mind, they won't be crispy like fried fries...they are baked after all!
To make the curry mayo:
Mix all ingredients together well with a spoon.
Refrigerate, or serve immediately.
