Chicken, Bacon, and Corn Chowder (Ashley's Way)

Ingredients

  • 5 slices bacon cut into pieces with scissors
  • 1 cup pre-chopped onion
  • ½ cup pre-chopped red pepper if you can't find this, then you have to leave it out...or find a way to cut up a red pepper with scissors
  • 8 oz cream cheese cut into pieces with scissors
  • 2 cans creamed corn can opener doesn't count as a dirty dish because you don't have to wash it
  • 1 small can chicken broth
  • 2 chicken breasts from rotisserie chicken (shredded with your own two hands)
  • 1 pint of milk

Instructions

  • In large soup pot, cook bacon over medium heat until crispy.
  • Remove bacon from pot, leaving the grease.
  • Add onion and red pepper to bacon grease and saute over medium heat for 5 minutes, stirring frequently.
  • After 5 minutes, stir in pieces of cream cheese to the onion and red pepper until all melted.
  • Add creamed corn, chicken broth, chicken breasts, milk, and bacon.
  • Stir to combine.
  • Simmer until bubbling over medium-low heat, about 10-15 minutes.
  • Serve with saltine crackers or crusty bread.
