Ingredients

for the dressing:

  • ¼ cup olive oil
  • 2 tablespoon dijon mustard
  • 2 tablespoon honey
  • ½ teaspoon salt
  • 2 teaspoon lemon juice ~half of a lemon

for the salad:

  • 4 cups brussels sprouts
  • ½ cup pomegranate seeds
  • 1 avocado diced
  • ¼ cup chopped pecans
  • ½ cup crumbled goat cheese

Instructions

To make the dressing:

  • Combine all dressings in a smal bowl and whisk until thoroughly combined.

To make the salad:

  • Place brussels sprouts in food processor and pulse until shredded.
  • Place shredded brussels sprouts in large bowl and toss with dressing.
  • Add pomegranate seeds, avocado, pecans, and goat cheese, and toss to combine.
  • Serve and enjoy!
