coconut almond quinoa granola

Ingredients

  • 1 cup uncooked quinoa
  • 1 ½ cup old fashioned-oats
  • 1 cup sliced almonds
  • ¾ cup shredded coconut I used sweetened
  • 2 tablespoon whole flaxseed
  • ½ teaspoon salt
  • ¼ cup melted coconut oil
  • 2-3 tablespoon maple syrup or honey depending on how sweet you want it
  • 1 teaspoon pure vanilla extract

Instructions

  • Preheat oven to 325 degrees F.
  • In large bowl combine quinoa, oats, almonds, coconut, flaxseed, and salt.
  • Stir to combine.
  • In small bowl, whisk together melted coconut oil with maple syrup and vanilla extract.
  • Pour over dry ingredients and stir well, mixing to combine.
  • Pour onto baking sheet lined with parchment paper and spread out evenly.
  • Bake in preheated oven for 20 minutes, stirring after 10 minutes and watching carefully during the last 5 minutes to make sure it doesn't get too brown.
  • Let cool completely.
  • Enjoy over yogurt, milk, or by itself!
