Lemon Sugar Cookie Bars with Strawberry Buttercream Frosting

A bright and cheery recipe for Lemon Sugar Cookie Bars is perfect for a spring dessert!

Ingredients

  • 1 cup unsalted butter at room temperature
  • 2 cups granulated white sugar
  • 4 eggs
  • 2 teaspoon pure vanilla extract
  • zest of 1 lemon about 2 tbsp
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon baking soda

for the strawberry buttercream

  • 1 stick ½ cup unsalted butter, at room temperature
  • 3 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • ¼ cup strawberry puree*

Instructions

To make the bars:

  • Preheat oven to 375 degrees F.
  • Grease 9x13" pan with cooking spray and set aside.
  • In large bowl, beat butter and sugar until light and fluffy, about 2 minutes.
  • Add eggs, one at a time, beating well to combine.
  • Add vanilla extract and lemon zest, beating well.
  • In medium bowl whisk together flour, salt, and baking soda.
  • Add slowly to butter mixture and beat until combined.
  • Pour into prepared baking dish and spread out evenly.
  • Bake in preheated oven 15-20 minutes. The bars will be barely set and will not have any color around the edges...that is okay!
  • Let cool completely.

To make the buttercream:

  • Cream together the butter and powdered sugar.
  • Add vanilla extract and beat to combine.
  • Add strawberry puree and beat until well combined.
  • Spread evenly over cooled bars.
  • Cut into squares and enjoy!

*For the strawberry puree: Place 6-7 strawberries in small food processor and process on high until very finely chopped and puree is formed. This should be about ¼ cup of puree, but measure it for this recipe.
