cinnamon apple baked oatmeal

Servings: 6 -8 servings

Ingredients

  • 2 eggs
  • ¼ cup maple syrup
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ cup canola oil or coconut oil
  • ½ cup unsweetened applesauce
  • 1 ¼ cups milk
  • 1 medium apple grated with skin on
  • 3 cups old-fashioned oats
  • 3 tablespoon brown sugar

Instructions

  • Preheat oven to 375 degrees F.
  • Grease 9x13" baking dish with cooking spray.
  • In a large bowl, beat together eggs, maple syrup, cinnamon, nutmeg, vanilla, salt, baking powder, oil, applesauce, and milk.
  • Stir in apple.
  • Fold in oats.
  • Pour into prepared pan.
  • Bake in preheated oven for 30 minutes, until just firm in the middle and golden brown on top.
  • Remove from oven and turn on broiler.
  • Sprinkle brown sugar over top of the baked oatmeal and broil for about 1 minute, until golden brown. Make sure to keep your eye on it!
  • Serve warm. Enjoy!
