Add a burst of sunshine to your day with Creamy Lemon Bars! This lemon bar recipe is beyond easy, with the crust and crumb topping being the same mixture, meaning less steps. The filling is a simple combination of lemon juice, lemon zest, and sweetened condensed milk.

Ingredients

Crust and Crumb Topping:

  • 1 ⅓ cup all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup unsalted butter, at room temperature
  • 1 cup brown sugar packed
  • 1 cup old fashioned oats

Lemon Filling:

  • 14 ounce can sweetened condensed milk
  • ½ cup fresh lemon juice
  • zest of 1 lemon

Instructions

Crust and Crumb Topping:

  • Preheat oven to 350 degrees F. Spray 9x9" baking pan with cooking spray.
  • In large bowl, beat together butter and brown sugar with electric mixer until well combined.
  • In small bowl, mix together flour, salt, baking powder, and oats.
  • Add oat/flour mixture to butter/sugar mixture and mix to combine.
  • Press half of crumb mixture into the bottom of prepared pan.

Lemon Filling:

  • In small bowl, mix together condensed milk, lemon juice, and lemon zest.
  • Spread onto the bottom layer of the crumb mixture.
  • Top with the other half of the crumb mixture, pressing lightly.
  • Bake for 20 to 25 minutes, or until golden brown.
  • Let cool for 30 minutes after baking.
  • Cut into squares and refrigerate for a couple of hours or until cool.
  • Enjoy!
