Combine all ingredients for chicken in shallow dish, and let chicken marinate for at least 20 minutes, up to an hour.
To make quinoa, cook according to package directions.
Combine with nectarines, red bell pepper, onion, cilantro, lime juice, jalapeno, salt, and avocado. Serve with chicken skewers.
Once done marinating, thread onion and chicken onto skewers.
Grill on preheated grill, 5 minutes on each side. Enjoy!
