brown butter chocolate chip oatmeal cookies

Ingredients

  • ½ cup 1 stick unsalted butter
  • ½ cup white sugar
  • ½ cup loosely packed brown sugar
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 1 ¼ cup all-purpose flour
  • ¾ cup old fashioned oats
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 ½ teaspoon cinnamon
  • ¾ cup chocolate chips

Instructions

  • In small saucepan, heat butter over medium heat. Whisking constantly, cook until small brown bits appear on the bottom of the pan, watching closely, then remove immediately.
  • Whisk for an additional 30 seconds or so.
  • Set aside to cool completely.
  • In large bowl, combine flour, salt, baking powder, oats, and cinnamon. Set aside.
  • Combine cooled butter with both sugars, stirring until smooth.
  • Add in egg and vanilla, whisking until smooth.
  • Add dry ingredients, and stir with wooden spoon to bring the dough together. If you find the dough still won't come together, add 1-2 tablespoon milk (I didn't have to do this, but the original recipe mentioned it).
  • Fold in chocolate chips.
  • Refrigerate dough for 30 minutes.
  • Preheat oven to 375 degrees F.
  • Form dough into 1 ½" balls, and place them 2 inches apart on a baking sheet.
  • Bake for 10-12 minute, until the edges are golden.
  • They may still be gooey on the inside but that's okay...they will firm up while cooling.
  • Enjoy with a big glass of cold milk!
