Oatmeal Coconut and Cinnamon Chip Cookies

Ingredients

  • 1 cup 2 sticks unsalted butter
  • 1 cup brown sugar packed
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 ½ cups all-purpose flour
  • ½ cup shredded sweetened coconut
  • ¾ cup cinnamon chips
  • 1 cup quick oats

Instructions

  • Preheat oven to 350 degrees F. Line baking sheet with parchment paper and set aside.
  • In large bowl, beat together butter, sugars, eggs, and vanilla until light and fluffy.
  • In medium bowl, combine baking soda, baking powder, salt, and flour and mix well. Add to wet ingredients and mix until combined. Fold in coconut, cinnamon chips, and oats with wooden spoon.
  • Drop tablespoonfuls onto prepared baking sheet.
  • Bake in preheated oven 9-11 minutes, until edges of cookies are slightly browned. They will probably not feel/look done in the middle.
  • Let cool for 10 minutes on baking sheet, then transfer to cooling rack to cool completely.
  • Serve with big glass of cold milk and enjoy!
