Slow Cooker Smothered Pork Chops use bone-in pork chops for super tender, gravy covered pork. Serve atop mashed potatoes for a perfect comfort meal.Today I am grieving, with the rest of the country, over the senseless and horrific attack at the Boston Marathon. As a marathon runner and Boston Marathon qualifier, I feel a connection to those runners who were affected today, and cannot even begin to fathom what they were feeling and going through. While it’s easy and understandable to feel anger and get caught up in the terrible happenings of today, I want to share with you a quote from Mr. Rogers that seems to bring a bit of light to sad events, like today.
I’ve read stories today of countless acts of people helping. Runners literally running to the hospital to donate blood. People opening up their homes to those who had no place to go. Volunteers rushing to the scene with wheelchairs. Spectators who are in the medical field stepping up to help anyone they can.
It’s inspiring and encouraging to know that although there are things, terrible things, that are happening on a much too regular occurrence, there is still more good in the world than evil. There are more people who wanted to help today than who wanted to hurt.
I wasn’t sure if I wanted to post a recipe on such a heavy day, but I feel it’s appropriate, as this is a meal that comforts. A meal of slow cooked and seriously tender pork chops. Smothered in a homemade bacon gravy that is made from the liquid and solids from the slow cooker. Atop a bed of fluffy mashed potatoes. This meal is the definition of comfort food.
Marc and I enjoyed this for our Sunday dinner last night, and we were “mmm”ing throughout the entire meal. I even caught Marc whispering “this is so good.” To which I replied “did you just whisper ‘this is so good’?!” It made us laugh, but speaks true to how delicious this meal really is. While it’s a slow cooker recipe, there is some pre-slow-cooker work that must be done, so this was perfect for a Sunday night meal. However, you could certainly do the prep work the night before, then refrigerate, and slow cook the next day. Even though there is some extra work, it is so worth it.

- 3 slices bacon chopped
- 4 bone-in pork loin chops about 3/4-inch thick
- Salt and Pepper
- 1 yellow onions peeled, halved and sliced into 1/2-inch thick half moons
- 1 teaspoon plus 1 tablespoon light brown sugar
- 1/4 cup water
- 3 garlic cloves minced
- 1 teaspoon dried thyme
- 2 cups low-sodium chicken broth
- 1 tablespoon soy sauce
- 2 tbsp butter
- 2 tbsp flour
- 2 tablespoons fresh parsley chopped
- In a large skillet over medium heat, cook bacon until lightly browned.
- Transfer bacon to a plate lined with paper towels, leaving the drippings in the pan.
- Heat the skillet with the drippings over medium or medium-high heat until hot.
- Pat pork chops dry with paper towels and sprinkle with salt and pepper.
- Add pork chops to hot bacon grease and cookuntil they are golden brown on each side, about 2 minutes per side, cooking them in batches in the skillet if your skillet isn’t big enough to hold all six at a time in a single layer.
- When golden on each side, transfer the pork chops to the slow cooker and repeat with remaining pork.
- Pour off all but 1 teaspoon of fat from the skillet; add onions, 1 teaspoon brown sugar, 1/4 teaspoon salt and 1/4 cup water to empty skillet. Using a wooden spoon, scrape browned bits from bottom of the pan and cook over medium-high heat until onions are soft, about 4-6 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds.
- Add onion mixture over chops in the slow cooker.
- Add broth, soy sauce and remaining 1 tablespoon brown sugar to slow cooker.
- Cover slow cooker and cook until pork is tender, about 8 hours on low (or cook on high for 4 hours).
- When ready to serve, carefully transfer chops to serving platter with a large spoon and tent with foil.
- Transfer liquids and solids from slow cooker to a food processor or blender and blend until smooth.
- In medium saucepan, melt butter.
- Once melted, add flour, stirring to mix with the butter for 1 minute.
- Slowly stir in the blended mixture into the saucepan.
- Cook over medium heat until thickened and bubbly, about 5 minutes.
- Pour over chops and sprinkle with parsley.
