secret recipe club: honey apple chicken salad

After a month off from the Secret Recipe Club, I’m back in action!  This month I was assigned to Miz Helen’s Country Cottage and had so much fun browsing her blog.  Along with her own recipes, she participates in a fun blogging event called “Full Plate Thursday” in which she links up other blog’s links with what she “filled her plate with” along with a link-up of what others filled their plate with.  It was so fun to look through!  

Since I’ve been on a baking spree the past week, I wanted to fill MY plate with something a little healthier, and this salad sounded perfect.  All of the components worked together so well – the dried sour cherries, mozzarella cheese, sunflower seeds, and rosemary honey dressing.  Are you wondering about the apples?  Well, I was in such a hurry to eat lunch after my Saturday morning workout, that I completely forgot to add the apples!  Doh!  I kept them in the recipe below because I know they would have been delicious, but I can say the salad was still great without it.  Thanks Miz Helen for the great healthy recipe!  

Honey Apple Chicken Salad
adapted from Miz Helen’s Country Cottage

for the dressing:
1/2 cup honey
3/4 cup apple cider vinegar
1/2 cup extra virgin olive oil
1 tsp salt
1 tsp freshly cracked black pepper
3 tbsp fresh chopped rosemary

for the salad:
4-5 cups fresh spring greens
2 cups shredded or diced chicken breast
2 red delicious apples, sliced thin
1 cup dried cherries, roughly chopped
1 cup shredded Mozzarella cheese
1/2 cup roasted and salted sunflower seeds

Directions:

To make the dressing: combine the honey, apple cider, salt, pepper, and rosemary in a blender.  Slowing, while the blender is on, stream in the olive oil until it is thoroughly blended.

In large mixing bowl, add spring greens, chicken, apples, dried cherries, cheese, and sunflower seeds.  Drizzle with half of dressing and toss well.  Add more dressing to your liking.  Enjoy!
