Raspberry Mimosas - Pouring a Bit More of the Drink into the Two Glasses

Happy Friday!  And happy birthday to MEEEEE!

I turn 32 today, so does that mean I can official say I'm in my mid-thirties?  When does that start?  More importantly, why do I even care?  Really what it means is that now I'm going to have to set a new age on my bike when I go to spinning class.

A lot of years I declare the month of March my birthday month and make a point to celebrate all month long. We've had a super busy month with vacation and other fun things that I can't talk about but will fill you in on soon, so this year my birthday has actually kind of crept up on me.

I also usually make my own cake because I really enjoy making my own cake and I love making it exactly how I want.  Since I'm actually heading out of town today for a bachelorette party in Colorado, I didn't get to make my own cake either.

I did, however, buy a funfetti cupcake at the grocery store and was completely disappointed.  Womp womp.

I guess this year I'm just drinking my birthday treat with these Raspberry Mimosas.  I can't complain because these babies are DELICIOUS!!

Raspberry Mimosas

When I had the idea for making raspberry mimosas I thought I might make my own raspberry puree.  Then I got lazy and bought raspberry lemonade instead.  In this scenario, laziness wins because not only was it so much easier, but it was super flavorful with the hint of lemon.

These aren't only great for a happy hour drink but they would also be perfect for a spring or Easter brunch!

Raspberry Mimosas

Servings: 4 mimosas

Ingredients

  • 1 bottle sparkling wine champagne, or any kind of bubbly!
  • 12 ounces raspberry lemonade
  • fresh raspberries for garnish

Instructions

  • Fill each champagne flute ⅓-1/2 full with raspberry lemonade.
  • Top off with champagne.
  • Garnish with fresh raspberries.
  • Serve and enjoy!
