Are you a snacker? I’m a total snacker. I go in phases with what I snack on…some weeks I stock up on Greek yogurt for my mid-afternoon munchies while others I prefer hummus and veggies. Lately, however, I’ve been obsessed with snacking on Peanut Butter Chocolate Chip Lara Bars. As in, I have an emergency box of them in my car “just in case.” I mean, we don’t want to go into what happens when I get hangry. It’s not pretty…just ask Marc.
I like having Lara Bars to snack on for a number of reasons: they are delicious, they satisfy my sweet tooth, and they are made out of minimal ingredients. As in, usually as many ingredients as I can count on one hand. I dislike Lara Bars for one reason: they are pricey. I’m pretty sure you can tell where I’m headed here – I needed to find a way to make them myself.
Since there are so few ingredients in LARABAR’s they were incredibly easy to figure out how to make. On the back of my (empty) box of Peanut Butter Chocolate Chip Lara Bars, it told me they were simply made of dates, peanuts, chocolate chips, and salt. I could work with that. I played around with it (adding in one more ingredient: water) until I got what I was hoping for.
The end result turned out just like the original. I swear, I could have closed my eyes and thought I was eating a $2 snack bar but really I was eating my homemade and much cheaper snack. I made them into balls because I figured they’d be easier to work with, as opposed to rolling them out and cutting them into bars, but you could definitely make bars if you prefer.
Tastewise, I thought the sweetness of them was perfect. They are naturally sweetned from the dates and not-so-naturally sweetned from the chocolate chips. If you want to keep your snack au natural you could definitely skip the chocolate chips. BUT since nothing goes better with peanut butter than chocolate, I’m keeping the chocolate chips.
- 1 1/2 cups unsalted peanuts
- 1/2 tsp salt
- 16 oz pitted dates
- 1-2 tbsp water if necessary
- 1/2 cup chocolate chips
- Add peanuts and salt to large food processor and pulse until peanuts are very finely chopped.
- Add dates and process until a paste forms.
- Add water, if necessary. I felt it was necessary to get everything to "stick" together but this may depend on how dry the dates are.
- Transfer mixture to a bowl and stir un chocolate chips.
- Roll into balls or spread out into a 9x9" baking pan and cut into bars.
- Store in refrigerator in airtight container.
