Healthy Weekly Meal Plan

Happy weekend!  I’m working this weekend but to be honest, I’m not even mad about it.  Wanna know why?  Because we leave for Italy in TWO DAYS!  Gah so excited!

Don’t worry – I still have posts scheduled to go up while we are gone (hello St. Patty’s Day!) and the healthy meal plans will be posted as usual, too.  I could never forget about you guys!

Monday

Spaghetti Squash Lasagna from Hip Foodie Mom.

Vegetarian Tip: You can easily skip the ground turkey and cheese to make this vegetarian and vegan.

One Pot 30 Minute Pasta e Fagioli from Flavor the Moments.

Prep Ahead: The entire meal comes together very quickly, but the onion, garlic, and kale may be prepped in advance to save even more time.

 

Thursday

Sausage Feta and Almond Parsley Pesto Pasta from greens & chocolate.

Prep Ahead: The pesto can be made in advance.
