Grilled Walleye Sandwiches

Growing up, most summers we would make the trek from Iowa all the way up to Northern Minnesota to spend a week or two at my grandparents' little cabin on a lake. I have so many great memories from these trips, but early morning fishing, with the fog hovering over the water, stands out the most. While we caught a variety of fish, the walleye was my favorite. It was the best to eat and always fun to catch a "keeper"!

Kingsford, an official partner with the Major League Baseball, has introduced a new cookbook called Taste of the Game. In this cookbook you'll find 30 recipes like Grilled Lobster Rolls, Spicy Korean-Style Chicken Wings, and Tex-Mex Shrimp Cocktail, along with the recipe that I made, Grilled Walleye Sandwiches. They are all perfect to make while enjoying a ballgame!

Each recipe in the Taste of the Game cookbook is paired with a baseball team, and in my case, it was the Minnesota Twins. As I mentioned, walleye is a fish that is commonly caught in thousands of the lakes of Minnesota, so I was stoked to cook up such a nostalgic food!

In this recipe, you light up your charcoal grill, and grill the walleye on top of lemon slices. The walleye is brushed with a dill, lemon, and olive oil mixture and it soaks up that amazing grilled flavor, along with the flavor from the lemon. Grilling on citrus is also a great way to ensure your fish doesn't stick to the grates or get burnt.

To top off these Grilled Walleye Sandwiches, this recipe has a homemade tartar sauce that is out of this world. There are chopped up dill pickles in it and more of that fresh dill and oh my I could just eat it with a spoon!
