Grilled Salmon with Avocado Mango Salsa

Grilled Salmon with Avocado Mango Salsa is an easy and healthy dinner recipe for perfectly grilled salmon topped with a fresh and tasty avocado mango salsa!

It’s funny how our taste preferences naturally change from hot dishes in the winter to fresh vegetables and grilled meat in the summer.  I love grilling season because not only does it make dinnertime so much easier for our family, but it also keeps things pretty healthy!  

How to Grill Salmon

Grilling fish can be tricky, and I have to admit - I’ve had my fair share of over-cooked grilled fish that was disappointing.  This recipe, however, is fail-proof.  There are just a few key pointers to keep in mind.  

First, make sure the grill is hot before placing the salmon on. This ensures a good sear on the outside of the salmon.  Second, you’ll want to oil the grill grates along with the fish.  The seasoning for the salmon also includes olive oil, which will keep the salmon from sticking to the grill. 

Lastly, be sure to cut any large pieces of salmon into individual 6 ounce slices.  This will make it much easier to flip and evenly cook the salmon throughout, compared to one larger piece. 

This grilled salmon with avocado mango salsa is packed with freshness and flavor.  The salmon is simply seasoned with a combination of olive oil, chili powder, cumin, lime juice, and salt.  It is ideal to let the salmon marinate for 30-60 minutes to really soak up the flavor.  While the salmon is marinating, it is the perfect time to make the avocado mango salsa.  

Mango Avocado Salsa

Since the salsa has avocado in it, you’ll want to prepare it as close to when you serve it as possible.  The combination of the mango with red bell pepper, red onion, cilantro, and avocado is absolutely delicious and it was a huge hit at our dinner table.  Not a spoonful was left in the bowl!

I served this grilled salmon with Instant Pot coconut rice, which was a perfect complement to the salmon marinade and the mango salsa.  I have a feeling this is one of those dishes we will be making again and again all summer long!

Ingredients

  • 24 ounces salmon cut into 4 6 ounce fillets, I used skin-on
  • 2 tablespoon olive oil
  • juice from 1 lime
  • 1 teaspoon chili powder
  • ¼ teaspoon cumin
  • ½ teaspoon salt

Avocado Mango Salsa

  • 1 avocado diced
  • 1 mango peeled and diced
  • 1 red bell pepper stem and seeds removed, diced
  • 1 jalapeno pepper stem and seeds removed, diced
  • ¼ cup diced red onion
  • ¼ cup chopped cilantro
  • juice from 1 lime
  • ½ teaspoon salt

Instructions

  • In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, and salt.
  • Brush the mixture over the salmon fillets and let marinate for 30-60 minutes.
  • Meanwhile, make the salsa.
  • Combine all salsa ingredients in a bowl. Refrigerate until ready to serve.
  • Grease your grill grates with oil.
  • Preheat the grill to medium-high heat.
  • Once the grill is hot, place the salmon on the grill, skin side down.
  • Cook for 5 minutes and then flip, cooking another 3-5 minutes, until the salmon flakes easily.
  • Serve topped with mango avocado salsa.
  • Enjoy!
