Happy Friday foodie friends! This is the third, yes third, time this spring that mother nature has threatened my weekend travel plans with a Thursday night snowstorm. This time I am putting my foot down and saying ‘enough is enough’! I am not succumbing to the snow this time and by golly, I am visiting my family in Iowa this weekend! Stuff My Face With Eat Avocado: Avocado Honey Dip. I have been on a serious avocado kick – eating it on salads, spread on toast, or even just sprinkled with salt and pepper and eaten with a spoon. I’m surprised I haven’t turned green yet. This creamy, sweet, healthy dip looks like my next plan of attack on the avocado.
Favorite What-Do-I-Bring-For-Lunch Solution: Queso Fresco and Chipotle Chicken and Veggie Wrap. I always struggle with what to bring for lunch during the week…I need something that will fill me up and keep me going through my active day, but also not weigh me down since I have to be physically helping patients. This wrap looks like the perfect lunch!
Favorite Salad I Would Actually Crave: Strawberry Avocado Honey Lime Salad. I made my Strawberry Poppyseed Salad this week for a potluck and now I can’t stop thinking of strawberry salads. Paired with the hardcore avocado kick I’m on, I am seriously craving this salad!
Favorite Summer Appetizer: Edamame Hummus and Yogurt Radish Crostini. Bread is one of my absolute favorite things to grill, and these toppings look deeelish.
Favorite Grown-Up Grilled Cheese: Spinach and Artichoke Grilled Cheese. If there’s spinach and artichoke dip on a menu at a restaurant, you better believe I want it. I particularly love when it’s served with warm, chewy, buttery bread so how could I not love this grilled cheese version of the dip?!
Favorite Spring Produce Dessert: Rhubarb-Ginger Crumble. Rhubarb always makes me think of my Grandma Esther, who has an overflowing bounty of rhubarb in her backyard. I adore a traditional rhubarb crisp, but could definitely get into this ginger-infused crumble.
Favorite Way to Eat Spring Veggies: Spring Vegetable Flatbread. Because sometimes, veggies just need to be covered in cheese.
Favorite Winter Dessert That I Can Still Justify Eating Because Hellooooo It Just Snowed 4 Inches In April: Salted Caramel Bread Pudding. Bread Pudding is one of those comfort desserts that most people either love or hate and I happen to Love it. With a capital L. And salted caramel…don’t even get me started.
Favorite I’m-So-Doing-That-When-We-Have-Kids: Washi-Taped Mason Jars. I can just imagine little ‘Marc and Taylor’s’ running around with crayons from these adorable little jars.
Favorite Candy Bar Turned Dessert Bar: Snickers Seven Layer Bars. Honestly, I could take or leave traditional Seven Layer Bars but I would never, ever pass up one of these Snickers Seven Layer Bars. Ever.
