Happy Friday! Did anyone else have a spectacular week?! Marc and I celebrated our 3-year anniversary, my mom was in town visiting, and Lars slept like a champ all week long. I’d say it was one for the books!
We are taking it pretty easy this weekend since Marc works and I go back to work on Tuesday (wahhhh!). Actually, can I confess that I’m actually kinda sorta looking forward to going back to work? I think it’s because I’m only going back part-time (two days a week) and Lars isn’t going to daycare (Marc and/or grandparents will be home with him) that I’m not freaking out. I’m sure there will be (lots of) tears come Tuesday morning but I think it’ll be okay. Someone please tell me it’ll be okay.

Favorite Fall Must-Have: This scarf! GAH I need it. Pair it with my favorite jeans, a pair of boots and I’d be good to go!
Favorite Date Night In Meal: Creamy Sage Butternut White Bean Gnocchi from Running to the Kitchen. Give me this and a glass of wine and date night is on!
Favorite Date Night In Dessert: Fancy S’Mores. Meringue + chocolate ganache + graham cracker crumbs = all my dreams come true.
Favorite Fall Morning Breakfast: Apple Butter Muffins from The First Year. Apple butter is something I MUST have in the fall – I put it on everything! I can’t wait to either make a batch or pick some up at the orchard and make these muffins!
Favorite All-My-Favorite-Things-in-One-Bowl: Sweet Potato Brussels Sprout Quinoa Bowl from Lauren Kelly Nutrition. Well, all of my favorite things except for chocolate.
Favorite Comfort Food in a Bowl: Ham Mac and Cheese Soup from The Food Charlatan. I haven’t had macaroni and cheese since I was pregnant and now I’m feeling a craving for this soup just as strong as those pregnancy cravings! This looks like pure comfort!
Favorite No Equipment Needed Naptime Workout: No Excuse Workout from Hair Spray and High Heels. This one is a butt kicker – which I need these days!
Favorite Post-Workout Treat: Pumpkin S’Mores Poke Cake from Beyond Frosting. It’s desserts like this that are the reason I work out.
Favorite 30 Minute Weeknight Meal: Easy Skillet Lasagna from Baked by Rachel. Since it’s cooked in a skillet, this lasagna barely takes 30 minutes! Such a great idea!
