Tomorrow is Lars’ 2nd birthday and I feel like I can’t believe I have a two year old and can’t believe he’s only been here for two years at the same time. Like where does the time go, but how do some of the days seem so dang long?!
I have a super sappy post planned for celebrating Lars so I won’t get too emotional now, but let me just say this. Parenthood continues to just blow my mind every. single. day. I never knew I could go from being so frustrated with one little human being to absolutely smitten with his smile and hugs, all within 30 seconds. He tests my patience more than anything daily but he truly has taught me to be a better person. I’m struggling to figure out how I’m going to fit even more love for another little boy in my heart, but something tells me you just find a way.
Anyways, this recipe! Oh I just love this recipe. It’s SO simple, but seriously so delicious.
I developed this recipe in partnership with GO VEGGIE, using their Vegan White American Style Bars. I’ve really loved all of the products that I’ve used with GO VEGGIE, but these bars might be one of my favorites. They melted perfectly and paired perfectly with the crescent rolls and asparagus. I use GO VEGGIE products even though I’m not vegan or lactose-free. I love that it is lower in calories, saturated fat, and cholesterol than regular cheese. Y’all know I love my dairy cheese, but on a daily basis, sometimes it’s nice to have something a little lighter.
These crescent roll bundles could not be easier. All they involve is popping open the can of crescent rolls and rolling up a couple spears of asparagus and some cheese in each one. Bake them in the oven for 15 minutes and you have yourself one fancy appetizer! Or lunch. Or dinner. Whatever works!
Also, this whole appetizer is vegan! I didn’t know this until I did some digging, but crescent rolls are actually considered vegan. So along with the GO VEGGIE cheese, these are 100% vegan!
- 1 can crescent rolls
- 16 asparagus spears ends trimmed
- 4-6 packages GO VEGGIE White American Style Bars or your favorite sliced cheese
- Preheat oven to 375 degrees F.
- Open can of crescent rolls and separate into 8 pre-cut triangles.
- At the wide end of each triangle, place 2 asparagus spears and approximately 1/2 of each American style bar.
- Roll up, going from wide end to thin end.
- Place on baking sheet lined with parchment paper.
- Bake in preheated oven for 15 minutes, until golden brown.
- Serve immediately and enjoy!
