Oh summer, how I love you. I just can’t get enough of all your beach days, walks around the lake, outdoor concerts, patio happy hours, and of course backyard barbecues. Sure, we try to stay regular with friend get-togethers during the winter, but there’s something so much easier and appealing about inviting people over to hang out in the backyard, play some yard games, and grill up all the meats.
The casual feel to backyard barbecues also has means I typically serve more casual food. While I probably wouldn’t dream of serving chips and dip at a dinner party in the winter, it seems completely acceptable at a barbecue. I typically lean towards burgers and brats because they aren’t as finicky as steak or fish when it comes to doneness, and there’s a new favorite burger in town: Gold’n Plump’s Tex Mex chicken patties.
While I am usually all about everything being homemade, there is definitely a time and place for pre-made convenience foods. Especially ones that leave room for a little interpretation and the addition of your special touch.
Take, for example, these Tex Mex chicken patties. Sure, I could make my own chicken patties, but why would I when these are already stuffed with hot pepper cheese, green chiles, and jalapeños, and are SO dang good?! AND I can add whatever toppings my heart desires to make it ‘my own’? Yes, please.
These chicken burgers are especially handy when entertaining, as they save you a ton of time, and everyone can put on their own fun toppings. I created a toppings station with ingredients I thought would go well with the Tex Mex flavors of the chicken burgers including corn, fresh diced tomatoes, cilantro, avocado, guacamole, and my favorite: bacon. I think green onions, any kind of salsa, and cheese would be fabulous too!
My favorite combination of the ingredients was a big scoop of guacamole with a slice of bacon and a spoonful of corn. The flavors from the guac and bacon went perfectly with the Tex Mex flavors of the chicken burgers and the corn on top was the perfect burst of sweetness in every bite.

Bacon Guacamole Tex Mex Chicken BurgersPrint Pin Rate
- 4 Gold'n Plump® Tex Mex Chicken Patties
- 4 buns
- 8 slices bacon cooked
- 3 ripe avocados
- 1 jalapeno finely chopped
- 1/4 cup finely chopped red onion
- 1/4 cup corn
- 1 roma tomato diced
- 1/4 cup chopped cilantro
- juice of 1 lime
- 1/2 teaspoon salt
- pepper to taste
- To make the guacamole:
- Mash up avocado in medium bowl with a fork.
- Add in chopped jalapeno, chopped onion, corn, tomato, cilantro, lime juice, salt, and pepper.
- Stir to combine.
- Cook the chicken burgers according to the package, preferably on the grill.
- Place chicken burgers on the buns, then top with guacamole and a slice of bacon.
- Top with any additional toppings you prefer - green onions, corn, salsa, etc.!
- Serve and enjoy!
