Wanna know what I’m still not sick of eating? Avocados. Can’t get enough of ’em. We even ate our share of guacamole when in Mexico (as in, we had nachos topped with a pile of guac every. single. day. for lunch) and I came back home and bought a bag of avocados the next day. Seriously, it’s an addiction I have.
As if I needed more reason to love avocados, they’re also insanely good for you too. Did you know they’re good for your heart, good for your blood pressure, good for regulating your blood sugar, they protect against cancer, increase nutrient absorption, and even cures bad breath?! It’s a miracle fruit! I didn’t make all that stuff up either, it says so right here, along with a few more health benefits.
I made this recipe before vacation, but am already planning to make it again soon. It’s a healthier version of chicken salad, with the avocados and swapping most of the mayo for plain yogurt. Plus it has a bunch of other yummy things like tomatoes, cilantro, cumin, and lime juice! You could throw some diced red onion in there too if you have it. I ate this chicken salad every way possible – in a wrap, on a sandwich, on top of mixed greens, even plain with a fork. Perfect to make ahead for a weekday lunch or for a summer picnic!
- 2 cups shredded chicken breasts
- 2 avocados diced
- 1/2 cup diced tomato
- 1/3 cup chopped cilantro
- 1/2 tsp cumin
- 1/2 tsp salt
- juice of 1/2 lime
- 2 tbsp mayonnaise
- 1/3 cup plain yogurt
- Combine all ingredients in large bowl.
- Serve on top of greens, as a sandwich, in a wrap, however you'd like!
