Apple Cheesecake Stuffed French Toast

Apple Cheesecake Stuffed French Toast is the perfect autumn morning breakfast!  Use up all the apples you picked at the orchard for this decadent and delicious stuffed french toast filled with caramelized apples and cinnamon cheesecake filling.

Happy Friday!!  I am spending the weekend (which started yesterday) at a cabin on a lake with some girlfriends.  We have a whole lot of nothing on our agenda, which sounds pretty amazing to me.  Since we just got back from our vacation in Utah, I didn’t exactly feel like I needed time away from the kids, but I am definitely looking forward to some quality girl time, reading, some time to get work done, a few solo runs, and SLEEP (the camping part our Utah trip wasn’t exactly restful).

What are YOU up to this weekend? Making a trip to the apple orchard with the family, perhaps?  This Apple Cheesecake Stuffed French Toast is exactly what your weekend needs!  After that trip to the orchard, you’re gonna need some ideas for what to do with all of those apples, right?!

Apple Cheesecake Stuffed French Toast

So what do we have going on here in this Apple Cheesecake Stuffed French Toast?  SO many yummy things!  First up, some caramelized apples.  Which is pretty much a fancy way of saying I sautéed some apples in butter, cinnamon, nutmeg, and brown sugar.  YUM.

Then I mixed together a simple mixture of cream cheese, honey, cinnamon, and nutmeg.  I also used my favorite vegan, lactose-free and dairy-free GO VEGGIE cream cheese spread!  If you’re not lactose-free, then you can use regular butter and cream cheese in this, but this recipe is EASILY made with butter spread, almond milk, and GO VEGGIE Cream Cheese Spread.  Whenever we use GO VEGGIE Cream Cheese Spread, we can never tell the difference and we save ourselves calories and fat!

To finish it all off, we made a french toast sandwich of sorts, hence, the “stuffed” part of the recipe.  I spread the cream cheese mixture on a slice of bread, topped it with the caramelized apples and then topped it with another slice of bread.  A couple of dips in an egg and milk mixture, and about 10 minutes on a griddle, and you have yourself Apple Cheesecake Stuffed French Toast!  SO delicious!

Ingredients

For the apples:

  • 1 tablespoon butter spread vegan/lactose-free if necessary
  • 2 apples peeled and sliced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

For the cheesecake filling:

  • 4 ounces GO VEGGIE Plain Cream Cheese
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

For the french toast:

  • 3 eggs
  • 1 cup milk I used unsweetened vanilla almond milk
  • Additional butter for greasing the griddle/skillet
  • 8 slices of bread

Instructions

To make the apples:

  • Heat butter spread in a medium pan over medium-high heat.
  • Add the apples, brown sugar, cinnamon, and nutmeg.
  • Stir and cook until apples are softened, about 7-10 minutes.
  • Remove from heat and set aside.

To make the cheesecake filling:

  • In a small bowl, stir together cream cheese, honey, cinnamon, and nutmeg. Set aside.

To make the french toast:

  • Preheat a non-stick skillet/griddle to medium-high heat. You want it hot and ready so you can place your french toast sandwiches immediately on the skillet after you dip them in the egg mixture.
  • In a shallow bowl, whisk together the eggs and milk.
  • Spread about 1 tablespoon of cream cheese mixture on four slices of bread.
  • Top with sautéed apples, and then top with another slice of bread to make a sandwich.
  • Grease your griddle/skillet with cooking spray or butter. I just like to put about a tablespoon of butter on while it's hot and move it around to get the entire griddle greased.
  • Dip the sandwich in the egg/milk mixture on both sides. Let excess egg/milk mixture drip off and then place immediately on skillet/griddle.
  • Cook for 4-5 minutes on each side, until golden brown and cooked through.
  • Serve immediately topped with maple syrup, powdered, sugar, or honey.
  • Enjoy!
